This Food Forum session explored consumer choices about foods and ingredients through consideration of factors that drive consumer preferences, as well as the role that consumer demand plays in shaping the food environment. It addressed decision-making at various levels, including consumers, food companies, and regulators, as well as innovative responses to consumer demand from the private sector, and explored future advances in the field.
